Ingredients:

  • ¼ lb softened butter
  • ¼ cup honey
  • 3/4 – 1 cup coconut flour
  • 1 tsp baking soda
  • 1 egg
  • Lemon zest (1/2 lemon)

Preparation:
1. Blend honey and butter together.
2. Add the egg and beat until smooth.
3. Mix the baking soda, coconut flour, and lemon zest in a separate small bowl.
4. Slowly add the flour mixture to the honey and butter until soft.
5. Roll the mixture out on parchment and dust with a little flour.
6. Bake for 6-8 minutes on 350 degrees.
7. Place on a wire rack and let it cool for a few minutes.

Coconut Flour Recipe #2: Double Chocolate Chip Coconut Flour Cookies

  • ½ cup dark chocolate chips
  • 1/3 cup butter or extra virgin coconut oil
  • ¼ tsp baking soda
  • ¼ cup unsweetened cocoa powder
  • 1/8 tsp salt

  • 1 tsp vanilla extract
  • 3 tbsp sifted coconut flour

Preparation
1. Preheat oven to 350 degrees.
2. Mix coconut oil and coconut palm sugar.
3. Gently add one egg at a time.
4. Add the coconut flour cocoa powder and vanilla. Mix until smooth.
5. Add salt and baking soda. Mix well.
6. Stir in the chocolate chips.
7. Use parchment paper to line your baking sheet. Drop spoonful of the cookie mixture on the sheet, about at least 2 inches apart.
8. Bake in the oven for 12 minutes.
9. Let them cool on a wire rack before eating.

Coconut Flour Recipe #3: Orange Medallions Coconut Flour Cookies

6. Bake at 325 degrees for 12-18 minutes until slightly golden.
