Raw stuffed peppers make a quick and easy lunch as they only takes a couple of minutes to prepare, in comparison to roasted stuffed peppers which obviously need to go in the oven. I love stuffed peppers whether raw or oven baked, but find these very handy as a quick and healthy lunch.
You can basically stuff them with almost anything, but I find adding quinoa and fresh vegetables works really well. They key is to have the quinoa prepared beforehand so all you need is to chop a few vegetables and you are good to go.
How to cook quinoa
Serving size: 100g
1. Rinse well under cold running water and soak in cold water for 20 mins and rinse again.
2. In a saucepan add 1 cup of washed Quinoa to 2 cups of water
3. Bring mixture to boil, reduce heat and simmer for 15 mins. Drain remaining liquid and serve.
I usually cook quinoa in bulk and place in the fridge, so there’s enough for a few days.
Easy Raw Stuffed Peppers
Capsicum (choose your favourite colour), cut in half
You may add some corn, peas, cooked beans or other veggies.
Chop vegetables and mix with quinoa. Place inside bell pepper and serve with salad. You may want to add some olive oil or tahini dressing and some pepper to taste. Serve and enjoy.
