Quick Healthy Pea Soup Recipe

I love meals which are quick and easy while at the same time very healthy for you. This quick healthy pea soup recipe is one of my favorites as it’s super easy and you don’t need to use vegetable stock or fry in oil. I know a lot of people do prefer to do that, but I think water tastes just fine, especially when you are in the hurry like most working adults. Who has the time anymore??? 

Ingredients
6 cups water (roughly)
4 potatoes with skin
200 grams fresh or frozen peas (or canned)
1 onion
1 stalk celery
2 small carrots
salt & pepper
parsley to taste

Directions: Add water to a pot and cook potatoes, carrots, onion, celery and peas. Season with salt, pepper and parsley (either fresh or dried parsley flakes) and cook until tender.

Turn off stove and let the soup sit for 10 minutes and add to a blender jug. Select low speed and increase to medium and blend for 30-40 seconds or until smooth depending on the type of blender. If you like your soup fairly thick and a bit chewy select slow speed and blend for a short time, or if you like a thinner consistency increase to high speed.

Serve and enjoy!
